Edinburgh’s Wedgwood the Restaurant has teamed up with the Edinburgh Sir Walter Scott Club to create a menu inspired by the author’s books to celebrate the 250th anniversary of the birth of Sir Walter Scott, which will be served up on 6 May.
Paul Wedgwood has devised a dine-at-home menu for the occasion featuring lesser known and traditional Scottish dishes and ingredients including Lamb’s tongue & tripe and Stoved howtowdie & Drappit eggs – a chicken dish. His Andrew Service’s nettle soup was created in honour of the novel Rob Roy and the traditional Almond and strawberry trifle is a replica of Scott’s descriptions of desserts in his famous novel, The Bride of Lammermoor.

Whisky kippered salmon, beetroot, salsify, lemon
Crisp lambs’ tongue, tripe, onions, soused cucumber

Mains
'Dressed' mutton rump, bashed neeps, braised barley, haggis, nettles
Stoved howtowdie, 'Drappit eggs', kale, mushroom (a dish of young, tender chicken served with spinach and poached eggs)
Baked cod, admirals’ sauce, 'crappit heads' croquette (a stuffing made with the head of the fish), spinach
Dunlop cheese bread and butter pudding [V], roast beets, leek porridge
Desserts
Glasgow punch drizzle cake, raspberry
Almond and strawberry trifle
Rhubarb pie, whipt cream
Edinburgh Sir Walter Scott Club members are invited to join a zoom event to honour Walter Scott, that will include a Q&A session with Paul to discuss the menu he has prepared.**
