Holyrood Distillery, the first single malt whisky distillery in Edinburgh for almost 100 years, is launching a new whisky experience that is available on Friday and Saturday evenings from 6th August.
The interactive experience will offer visitors the chance to tour the working distillery and learn about Holyrood’s innovative approach to whisky production. The tour of the whisky distillery is punctuated by tastings of 4 of Holyrood’s new make spirits, including a new make spirit cocktail. The whisky experience focuses on how Holyrood are bringing flavour forward by experimenting with a variety of yeasts and speciality malts, as well as dipping into Edinburgh’s rich brewing heritage. The 4 new make spirits will also be available in the shop to buy.
By law, whisky must be matured in the cask for a minimum of three years. The new make spirit comes directly from the whisky still - before the cask maturation process - and tasting it at this stage gives a fascinating insight into the flavours imparted through distillation. The rare opportunity to taste the spirit allows visitors a unique chance to experience something that will go onto become some of the first whisky to be produced in Edinburgh for 100 years.
In addition to the new experience, the Distillery’s Courtyard Bar is open throughout August serving up its own gin and new make spirit cocktails, alongside drinks from carefully selected local independent brewers and distillers. Holyrood has also partnered with local restaurant Luxford, and independent coffee bar, Don’t Tell Mama.
Luxford, a local Southside Burger and Cocktail Lounge has proved incredibly popular already with their wide menu of chicken, beef and veggie burgers and speciality halloumi, katsu chicken or fiercely rarebit loaded fries.
From Wednesday 11th August, Don’t Tell Mama, a local Mediterranean coffee bar, will be based in the Courtyard in their quirky converted trailer, serving homemade chocolate brownies, crepes with a wide selection of toppings, smoothies, iced tea and coffee, and mouth watering espresso martini’s.
The Courtyard Bar is dog-friendly and a relaxed and welcoming outdoor space to enjoy some of the city’s finest food and drink, just a stones’ throw from the Pleasance.
The whisky experience lasts approximately 75 minutes, costs from £25 per person and can be booked at www.holyrooddistillery.co.uk. Visitors can also choose to tour the gin and whisky distillery, from £15.50 for 1 hour, with the opportunity to add a flight of spirit to enjoy afterwards in the bar overlooking Arthur’s Seat.
